We’d like to add a subtitle: this book was written by two scientists. Why this matters is that as fun as cookies are to eat, their creation is based on chemistry and physics. Taylor and Arguin are also accomplished bakers and IACP nominees. Recipes have a Southern flair, as per the provenance of the authors, and are organized into categories including: bar, drop, rolled, sliced, filled, piped and savoury.
